I am making mead!

So I have all my ingredients ready. I'm going to make two gallons, 4 half-gallon batches. Working super simple recipes. Honey/Water, raisins/yeast, and also a little cinnamon and vanilla.

I'm making it in Soda bottles so two will be plain...and I'll try to re-ferment one to get some natural carbonation The other two, one will also have cinnamon stick, and the other Vanilla bean.

OK - brewing commences tonight. I'll take pics.

Total Ingredients/Materials:
4 clean dry soda bottles
6 lbs of honey
2 gallons purified water
box of raisons
Cinnamon stick and Vanilla
Bread Yeast
Balloons

I've got a couple bottles still kicking around from when I last made it in the Nineties (well, a pyment and a melomel) . . . and one that has a visible vinegar mother in it that I have to break into to try (bet it's really interesting). Honestly, I'm kind of waiting for the right sort of special occasion: there aren't many friends who'd appreciate the opening of a well-aged mead (it could be good; it could be great . . . it could be horrible!) and who appreciate what went into it. I never tried spicing mine . . . hmm.

OK - it is in the bottles!

2 bottles of "plain"
1 with Vanilla bean
1 with cinnamon sticks

Now to let it ferment for 30 days

One week in! So far, everything going well. One bottle took a while to get going, but is doing fine now. Time to put in my storage area and wait!

So, I let fermentation go long. Maybe 2 mo.

I have now transferred the mead to new bottles for some aging. we'll see what I have made in another month or so!
