I know how accurate you are, I've seen the pics! Smile

Was at my hunting property putting up my ladder blinds this week (mon-wed) and did some scouting in the food plot. This guy showed up three evenings in a row at about the same time 6:15 ish. The first night he was with a bigger buck, then 7 does showed up. The second night just he and a flock of turkeys showed. The third night a little doe showed up later after he had been there awhile. He got within 5 yards of my blind each night. The third night I took the photo. Archery deer seasons starts Oct 1 so I am hoping he and/or his big brother will continue to show up.

I broke my arm last year and could pull my bow. This year I bought a crossbow just in case. It is so easy to shoot 3-4" groups out to 40 yards that I may just use it instead. I typically limit my shots to 30 yards or less.

I am pretty sure I watched him and his big brother last year, same time and place and they were only 6 pointers.

Cut the backstrap into 1 inch thick slices and soak in buttermilk overnight. Dredge in a mixture of 1 cup whole wheat flower, 2 Tbsp garlic powder, 2 Tbsp paprika, 1 Tbsp salt and 1Tbsp pepper. Deep fry in peanut oil.

Mix then heat till bubbly to combine flavors 1 Tbsp Splenda brown sugar, 1 Tbsp low sodium soy sauce, 1 clove minced garlic, 2 Tbsp creamy peanut butter, and 1/4 cup coconut milk for a dipping sauce. To spice it up add a Tbsp of Crystal hot sauce.

Peal and cut up some sweet potatoes and fry them up as a side.

Personally I like my backstrap cooked rare on a grill with nothing else, just meat. No seasonings,  nothing but a good   Cabernet or Syrah, maybe with some sauteed mushrooms and or baked potato.  If you butcher it right you'll get no gamey taste and you don't need anything with it.
